गर्मी शुरू होने के बाद। दो-तीन बार बारिश होने के बाद। मीठे आम का अचार बनाने के लिए एकदम सही  समय होता है। उस समय अचार डालने से। अचार लंबे समय तक टिकता है और उसका स्वाद भी बढ़ जाता है। बारिश के बाद आम का स्वाद और भी अच्छा हो जाता है, जब भी अचार बनाएं तो इस बात का ध्यान रखें।

  1. आम खरीदते समय इस बात का ध्यान रखें कि उसमें बीज न हों। फाइबर युक्त मीठे आम के अचार से अच्छा अचार नहीं बनता और बाद में वे दांतों में भी फंस जाते हैं जिससे अचार खाने का मजा खराब हो जाता है।
  2. आम खरीदते समय यह सुनिश्चित कर लें कि सभी आम स्वस्थ हों और कोई भी खराब या सड़ा हुआ न हो।

Ingredient Of Sweet Mango Pickle

  1. 2 kg mango, cut into pieces
  2. 50 grams fenugreek seeds
  3. 25 grams red chilli powder (coarsely ground)
  4. 30 grams nigella seeds
  5. 50 grams fennel
  6. 1 tablespoon black peppercorns
  7. 100grams turmeric powder
  8. 00 grams salt
  9. 1 liter mustard oil

Preparation of Process

  1. While buying mangoes, make sure that all the mangoes are healthy and none is spoiled or rotten.
  2. Wash the mangoes and dry them thoroughly for 15 hours. Then, cut them into small pieces, leaving the seeds behind.
  3. Grind fennel, yellow mustard and fenugreek coarsely.

Method Of Making

Now heat the oil well in the pan and then keep it aside to cool slightly. When the oil cools down slightly, add all the ground spices, soft yellow fenugreek and mustard and mix. After that add turmeric, salt to taste. Add red chilli asafoetida and mix well.

 After mixing, add small chopped mangoes. After that mix it well again and leave it covered for 10 to 15 minutes. After some time, when you have mixed the masala properly, then pack it well in a plastic or glass container. If you want, tie a dry cloth over the container and then close the lid of the container and expose it to sunlight for 10 to 15 days.

 Make sure that there should not be even a single drop of water in the pickle and there should not be any dirt in it. Stir the pickle well once a day and then keep it in the sun. After 10 to 15 days, when the pickle gets ripe, it will become edible. You can store this pickle well for a year. Remember that its lid should always be closed tightly, no dirt of any kind should enter it and no water should enter from anywhere else.

 After waiting patiently for a few days, your Sweet Mango Pickle will be ready to enjoy! Each piece will be sweet, sour and spicy. Serve it with your favorite Indian dishes, such as dal with rice or parathas, or simply enjoy it as a delicious side dish on its own.

Things to keep in mind while making pickles.

  • Start making pickle only after completely drying the mango water.
  • Do not use any wet utensil while making pickles. Use all utensils after drying them thoroughly. Use pickle spoons only after cleaning them properly.
  • Always keep the lid of the pickle closed.
  • While taking out the pickle, keep in mind that your hands should not be wet and take out the pickle with clean hands.Keep pickles in sunlight once in a month.
